We bring in whole octopus legs every year around the Lunar New Year season.
But this year’s octopus felt different.
It’s Joban-mono, and the moment we saw it, we knew —
this was a large, impressive leg, and one we had been hoping to find.

What Is Joban-mono?
Joban-mono refers to seafood landed off the coast stretching from Fukushima to Ibaraki.
This area is known for its complex ocean currents, where cold and warm waters meet.
Seafood raised in these conditions is valued for its balance —
firm structure, yet rich, natural umami.
This octopus clearly shows those qualities.
Large in Size, Gentle in Texture
The leg is thick, substantial, and visually striking —
the kind of size that immediately stands out on the table.
Yet despite its impressive scale, the texture is surprisingly tender.
It yields easily with each bite, without resistance.

There’s none of the rubbery toughness often associated with overcooked octopus.
From the surface to the center, the texture stays even and smooth,
and as you chew, a gentle sweetness and umami slowly unfold.

Best Enjoyed Simply
This octopus is fully boiled and ready to eat.
Once thawed, it can be enjoyed as is.

In fact, the best way to appreciate its quality
is not to do too much to it.

- Dressed lightly with olive oil
- Or simply prepared as a classic vinegared dish
We recommend starting with the simplest approach —
just thaw, slice, and taste.

How to Thaw
For best results, transfer it to the refrigerator the night before
and allow it to thaw slowly. This helps preserve its clean texture.

If you’re short on time, running water thawing is perfectly fine.
Keep it sealed in the package and thaw briefly.
