What Are Sake Lees?
Sake lees, or sake kasu, are a traditional Japanese fermented ingredient created during the sake-making process.
After rice, koji, and water are fermented to make sake, the remaining soft, white paste is known as sake lees.
For generations, people in Japan have used sake lees to marinate fish and vegetables—not simply to preserve them, but to enhance their natural flavor.
Over time, the gentle aroma and rich umami of the sake lees slowly infuse the ingredients, bringing out their very best.

How to Prepare
1. Defrost
- For the best results, defrost overnight in the refrigerator.
- If you're short on time, simply place the unopened package under running water for about 10 minutes.
2. Lightly Wipe Off the Sake Lees
- Gently wipe away most of the sake lees with a paper towel.
- A little left on the fish is perfectly fine.
3. Cook
- Line a frying pan with baking paper or parchment paper and cook over low to medium-low heat.
- Cook for about 4–5 minutes on one side, then turn over and cook for another 3–4 minutes, or until the fish is cooked through.
*Because sake lees contain natural sugars, they can brown quickly.
Cooking gently over low heat helps prevent burning.
