Shipping guide
Salmon I love, with the gentle sweetness of Saikyo miso.
Buttery coho salmon, with its natural sweetness and the rich, mellow flavour of Saikyo miso.

With the first bite, you taste the salmon’s own sweetness and umami in the tender flesh, followed by the depth of flavour from the miso.
Mellow sweetness, and the fragrance of miso as it browns.
A taste of Japan that makes you want a mouthful of freshly cooked rice.

As you ease your chopsticks into the salmon, the moist flesh flakes apart beneath the golden surface. Rich coho salmon, with the sweetness of miso that has had time to settle into the fish. A bite of salmon, then a bite of rice. Every time, I find myself thinking how much I love this combination.
While the rice cooks, I gently cook the salmon and prepare some miso soup. Add a small dish of vegetables, perhaps some spinach ohitashi, and dinner is ready.
◎ Tender Coho Salmon, with a Rich, Mellow Flavour
We bring you a portion of coho salmon, slowly marinated in Kyoto-style Saikyo miso.
Coho salmon has tender flesh and a lovely richness from its natural fat. Once cooked, it flakes apart easily, with the salmon’s own sweetness and umami in each bite.
The gentle sweetness of Saikyo miso goes so well with that richness. You can still taste the salmon itself, with the mellow flavour of the miso alongside it.
◎ Giving the Miso Time to Settle into the Fish
Before cooking, the salmon is slowly marinated in Saikyo miso.
What I like about marinating is how the miso’s sweetness and umami become part of the fish, so you can enjoy them together with the salmon’s own flavour.
Over time, the flavour of the miso makes its way into the flesh. Even after you wipe away the marinade before cooking, that sweetness and umami remain. You can taste them in each piece as you gently flake the salmon apart.
Giving the fish time in the miso before cooking adds another depth of flavour to the salmon we already love.

◎ Kyoto’s Saikyo Miso, with the Natural Sweetness of Rice Koji
Saikyo miso is a white miso long enjoyed in Kyoto. It is made with plenty of rice koji and less salt than most other types of miso.
Its flavour is mild and mellow, with a natural sweetness that comes from the rice koji. It complements the fish beautifully.
With rich coho salmon, that sweetness brings a lovely balance to each bite. Cooking adds the fragrance of lightly browned miso, too. The moist flesh and the golden surface are both lovely with rice.

How to Prepare
We deliver it frozen.
-
Thaw slowly in the refrigerator
Delivered frozen. Transfer the salmon to the refrigerator the day before cooking and allow it to thaw completely.
-
Gently wipe away the miso
Once thawed, use kitchen paper to gently remove most of the marinade, leaving a thin layer on the salmon. The flesh is tender, so take care not to rub it too firmly. The flavour has already settled into the fish. Removing the thicker coating of miso helps prevent the surface from burning during cooking.
-
Cook gently, watching the colour
You can cook the salmon in a frying pan, grill, toaster oven, or air fryer.
For a frying pan, use low to medium heat. For the other appliances, use a gentle heat setting and check the salmon as it cooks. Saikyo miso burns easily because of its sugar content, so avoid high heat and cook until the salmon is fully cooked through.

For breakfast, serve it with rice, miso soup, tamagoyaki, and a few pickles. For lunch, add some vegetables for a simple Japanese set meal. At dinner, grated daikon or spinach ohitashi makes a lovely accompaniment.

It’s nice to have a portion in the freezer and think, “We’ll have this tomorrow.” One part of the meal is already decided, with freshly cooked fish to look forward to.

A traditional Japanese favourite that fits perfectly into modern everyday life.
