Hokkaido White Asparagus
A delicacy of early spring — available only for a limited time in Hokkaido.
White asparagus is grown without sunlight, which prevents the formation of chlorophyll. The result is a pale, tender stalk with a clean aroma and naturally sweet flavor.
Unlike green asparagus, its elegant taste shines when simply boiled and paired with butter, olive oil, or a classic hollandaise sauce.
A seasonal treat that feels like a fine restaurant dish — yet can be enjoyed right at home, perhaps with a glass of white wine.

How to Boil White Asparagus
When it comes to white asparagus, careful preparation brings out its best.
Boiled gently, it becomes silky and sweet — a true spring indulgence.
Ingredients (for about 10 stalks)
・Water: 2L
・Salt: 2 tablespoons
・Lemon juice or vinegar: 1 tablespoon (to preserve the color)
・Optional: 10g of butter for added richness
Instructions

Trim about 1cm off the bottom, and use a peeler to remove the skin from the lower 1/3 to 2/3 of each stalk.

Set the peeled skins aside — don’t throw them away.

In a large pot, bring the water to a boil with salt, lemon juice, and the reserved peels.

Add the asparagus and simmer gently for 4–5 minutes, until a skewer slides through easily.

Turn off the heat and leave the asparagus in the pot for another 10–20 minutes to let the flavors settle back in.
Boiling with the peels enhances the natural aroma and depth of the asparagus.
You can even use the remaining broth as a base for soup or risotto — it’s full of delicate flavor.
