Cod Sio Koji without Bones

Shio-koji is a versatile seasoning made by fermenting rice koji with salt and water.
When used for grilled fish, it offers the following benefits:
1. It tenderizes the fish, making it soft and fluffy.
The protease enzymes in salt koji break down proteins, softening the fish meat.
2. It enhances the fish's umami flavor.
The umami compounds produced during the fermentation of salt koji bring out the natural taste of the fish.
3. It results in a moist texture.
Compared to regular salted grilled fish, it reduces dryness and creates a juicier finish.
4. It has a salt-reducing effect.
The umami of Shio-koji allows for a tasty dish with less salt content.
In addition to the benefits of salt koji, all fish in JX's marinated boneless series are specially prepared with bones removed by hand.
What is Sio Koji Zuke?
Tender Textures and a Delicate Savouriness
Sio Koji imparts a delicate, almost undetectable savouriness to food ingredients. Umami on first bite, followed by a hint of salt and then a faintly sweet aftertaste that is characteristic of Sio Koji.
How to Enjoy
1. Please move it to the refrigerator to thaw at least 12 hours before serving.
(once thawed, please consume within 1-2 days for the fish will become increasingly saltier as the marinade continues to penetrate the fish flesh.)
2. Slowly cook over low heat on the grill or using parchment paper or similar.
*It can also be deliciously enjoyed by wrapping it in aluminum foil and cooking it in a steamed style.
