About Silver Cod

Silver cod is known in English simply as "silver cod." It is celebrated for its firm flesh and rich, fatty flavor. In Japan, it is especially prized as a high-quality ingredient for Saikyo-yaki, with its taste reaching new heights during the winter months when its fat content increases.


Characteristics of Saikyo Miso

Saikyo miso is a traditional miso that has been used in the Kansai region, particularly in Kyoto, for generations. Unlike typical red or white miso, it boasts distinctive qualities:

  • Sweetness and Mellow Flavor:
    Saikyo miso is notably sweeter and milder than other types of miso, enhancing the natural flavors of the ingredients.

  • Depth of Flavor:
    When marinated for a long period, the miso melds seamlessly with the fish's umami, creating a unique richness and aroma.



How to Enjoy

  1. Delivered frozen.
  2. Simply remove it from your freezer and heat in a water bath for 5 minutes.
  3. Then, lightly sear it in a frying pan to achieve a deliciously caramelized finish.

*Alternatively, after thawing, you can also simply sear it in a frying pan until it develops a nice, browned crust.
