They use the rare "Kojo Ume," known as the "Blue Diamond" due to its limited production, in a luxurious manner.
It is made by soaking plum in a base of japanese sake, and thus has a taste that harmonizes the flavor of sake with the refreshing sourness of the plums.
The elegant tartness of the plums and the clear, smooth flavor of the liquor, free from any harshness or off-notes, pair well with traditional Japanese dishes rich in umami.
It offers the classic enjoyment of a slightly astringent and tangy taste.

Speciality of Blue Diamond, "Kojiro Ume"
The "Kojiro Ume," originating from Kishu Tanabe, is a large, glossy plum with firm flesh and a strong tartness, making it ideal for extracting rich juice.
Known as the "Blue Diamond," this green plum is perfect for making umeshu and was once indispensable in its production.
However, in recent years, the production of "Kojo Ume" has significantly decreased due to the increase in the cultivation of "Nanko Ume," which is more versatile.
As a result, "Kojiro Ume" has become a very rare and valuable variety of plum.
Award-Winning Design Inspired by Tradition
A Collaboration with Osaka Mode Gakuen
The product's design and name were created by students from the Graphic Design Department at Osaka Mode Gakuen (Osaka City) as part of an industry-academia collaboration project with the concept of "conveying the goodness of the past (history and tradition) to the present."
Additionally, it won first place in the Visual Category at Japan's largest Umeshu contest, the "Tenma Tenjin Plum Wine Competition," in 2011.
Award-Winning Design Inspired by Tradition
The GI (Geographical Indication) system is a scheme where the government registers and protects specialty products that include place names as regional brands.
This system is expected to ensure quality and further expand sales channels.
To be recognized as a GI product, the umeshu must meet certain standards, such as using plums produced in the prefecture and carrying out the pickling process within the prefecture.
Only umeshu that meet these criteria are certified and can be sold as "GI Wakayama Umeshu."
