Marinated in Sendai's signature miso and sake lees from Ichinokura Brewery, this salmon has a rich, mellow sweetness that is popular with everyone, from children to the elderly.
It pairs perfectly with rice and also makes a great accompaniment to sake.

Ichinokura Brewery, renowned for its premium sake, provides the sake lees used to marinate this succulent salmon with miso.
This unique process not only ensures a juicy texture but also amplifies the fish's inherent richness without overshadowing its original flavor.
Salmon has its own distinctive flavour, that is enhanced by the saltiness of Sendai's signature miso made with rice koji instead of wheat. Sakekasu adds a faint sweet fragrance and rounds out the taste of the miso, creating a marinade that has just enough flavour to enhance the taste of fish without being overwhelming. What you get is 120% salmon flavour with just the slightest whiff of sake.
The best thing is that this fish has no bones! Children, the elderly and people who dislike bones will be able to enjoy the entire fillet without having to worry about cumbersome bones.

How to Enjoy
1. Please move it to the refrigerator to thaw at least 12 hours before serving.
(once thawed, please consume within 1-2 days for the fish will become increasingly saltier as the marinade continues to penetrate the fish flesh.)
2. Slowly cook over low heat on the grill or using parchment paper or similar.
*It can also be deliciously enjoyed by wrapping it in aluminum foil and cooking it in a steamed style.
