A Singapore-Japan fusion that infuses the Japanese classic, Castella, with beloved local flavours Pandan and coconut.

Soft, nostalgic Pandan Flavour

Soft and slightly chewy with a gooey layer on the bottom from the zarame-tou (coarse brown sugar).

The castella has a sweet aroma of pandan and coconut, reminiscent of local favourite Kueh Bangkit, and a texture similar to that of moist, paper-wrapped sponge cakes.

At JX, we are driven to bring the best of Japan to Singapore by leveraging our networks and experience to source for quality Japanese products that will spark joy for Singaporeans.

This time, we decided to put a Singaporean twist on a Japanese classic by collaborating with locally-based pâtissier Chef Yamashita, whose delicate pastries and light, fluffy cakes are well-known in Singapore, as is his patisserie, the eponymous Chef Yamashita located at Tanjong Pagar Plaza. 

To honor Singapore's culinary traditions, we chose to use the pandan leaf to flavour our castella. 

A graduate of the prestigious Tsuji Culinary Institute in Osaka, Japan, Chef Yamashita enjoyed a very successful career in Japan before moving to Singapore almost 2 decades ago. Here, he first helmed Pâtisserie Glacé, followed by Flor Pâtisserie at Duxton Hill, and then finally set up his own patisserie.
