This yaki imo uses the Beni Haruka variety, which has the highest sugar content. In its raw state, it has about 35 degrees Brix (sugar content), and when baked, it increases to 50-60 degrees Brix.

To achieve these feature, first bake at a low temperature at 60° for an extended period, allowing the dough to rest periodically. Finally, finish at a high temperature to create a browned surface. And it's completely addictive free!
