Chewy, Smooth Authentic Sanuki Udon with Sweet Aburaage


A warm bowl of kitsune udon is one of those simple Japanese meals that always feels good.

This one comes from Kagawa, the home of Sanuki udon.

The noodles are made using traditional hand-stretching techniques from Shodoshima, giving them the smooth surface and satisfying chew that good Sanuki udon is known for.


But what makes this one particularly interesting is how it comes.
The noodles, broth and aburaage are all frozen together — as one complete bowl of udon.


No separate soup. No separate noodles. And no water to add.
Straight from the freezer into a pot.



THE NOODLES


There’s a reason these noodles have such a distinctive texture.


During kneading, the dough is made with a high water content of around 51%.

The noodles are then hand-stretched multiple times over two days — a process that gives them their smooth exterior and pleasantly chewy texture.




They’re softer than al dente, but still have that satisfying bite you want from Sanuki udon.
And importantly for a frozen udon, that texture holds up beautifully once heated.



THE BROTH

The broth is made from a blend of bonito, sardine and kombu, with soy sauce from Shodoshima.


It’s full of dashi flavour, but still gentle enough that you can happily finish the whole bowl.
Exactly the kind of broth we like with udon.

 

AND, OF COURSE, THE KITSUNE


“Kitsune” udon is served with aburaage — fried tofu that has been gently simmered and seasoned.

Here, the aburaage is seasoned with sugar, soy sauce, mirin and salt.

Soft, fluffy and slightly sweet, it works beautifully with the savoury dashi broth.





STRAIGHT FROM THE FREEZER TO THE POT.


This is also what makes this udon particularly useful to keep at home.

The broth, noodles and aburaage are all frozen together in one vacuum-sealed pack.

No need to boil the noodles separately.
No need to prepare the broth.
And no water to add.



Simply empty the frozen contents into a pot and heat over high heat for approximately
8 minutes, until everything has melted and the soup begins to gently bubble.


Loosen the udon with chopsticks, and it’s ready.

It comes to us through Kodawari Shoten, where owner Mr. Yasui personally selects foods from producers across Japan.

He has tried more than 100 types of udon.

And from more than 20 varieties made by this particular producer, this Kitsune Udon was his choice.

“Most frozen Sanuki udon loses some of its firmness. But this one still tastes like Sanuki udon should.”

He also loved the gentle broth and the large, fluffy aburaage — but it was the texture of the noodles that really convinced him.

For Mr. Yasui, it’s the most satisfying udon he has ever eaten.

That was a recommendation we thought was worth listening to.

How to store Keep refrigerated (under 10°C)
How to enjoy 1. Remove the outer and inner bags and place in a pot while still frozen. *No cold or hot water is necessary.
2. Heat over direct heat for approximately 8 minutes while loosening the noodles with chopsticks to prevent them from sticking to the pot. Once boiling, once the ingredients have warmed up they are ready.
3. Transfer from the pot to a serving dish and enjoy.
