Defrosting
- For best results, thaw overnight in the refrigerator.
- If you're short on time, room-temperature defrosting also works.

Cooking
- Lightly season just before cooking.
- Sear both sides over high heat until golden brown and caramelized.
- Cook to your preferred doneness — medium rare to medium is recommended for a tender, juicy finish.
