Japanese Akauo Kasuzuke (Marinated in Sake Lees)

Gentle umami, brought out through the art of Japanese fermentation.

In Japan, fermentation has long been valued not only as a way to preserve food, but as a way to bring out the very best in each ingredient.

Akauo Kasuzuke is one example of this tradition.

Tender white-fleshed akauo is slowly marinated in sake lees, allowing the fish to become softer while gradually developing a deeper, more delicate umami.

As it cooks, the sake lees impart a gentle aroma and a subtle natural sweetness.

The result is a comforting dish that pairs beautifully with a simple bowl of steamed rice.

What Makes It Special

  • Carefully marinated in traditional Japanese sake lees
  • Delicate aroma with a gentle natural sweetness
  • Tender, flaky white flesh
  • Ready with just thawing and cooking
  • Made for a comforting bowl of steamed rice

About Akauo

Akauo is prized for its tender, flaky white flesh and clean, delicate flavor.

It has just the right amount of richness without feeling heavy.

Combined with the gentle fragrance of sake lees, its natural sweetness and umami become even more pronounced.

It is also a good source of protein, along with nutrients such as DHA, EPA, and vitamin D, making it a wonderful choice for everyday meals.

What Are Sake Lees?

Sake lees, or sake kasu, are a traditional Japanese fermented ingredient created during the sake-making process.

After rice, koji, and water are fermented to make sake, the remaining soft, white paste is known as sake lees.

For generations, people in Japan have used sake lees to marinate fish and vegetables—not simply to preserve them, but to enhance their natural flavor.

Over time, the gentle aroma and rich umami of the sake lees slowly infuse the ingredients, bringing out their very best.

How to Prepare

1. Defrost
- For the best results, defrost overnight in the refrigerator. (Recommended)
- If you're short on time, simply place the unopened package under running water for about 10 minutes.

2. Lightly Wipe Off the Sake Lees
- Gently wipe away most of the sake lees with a paper towel.
- A little left on the fish is perfectly fine.

3. Cook
- Line a frying pan with baking paper or parchment paper and cook over low to medium-low heat.
- Cook for about 4–5 minutes on one side, then turn over and cook for another 3–4 minutes, or until the fish is cooked through.

*Because sake lees contain natural sugars, they can brown quickly.
Cooking gently over low heat helps prevent burning.

As the gentle aroma of sake lees fills the kitchen, a simple bowl of freshly cooked rice is all you need to complete the meal.

Add miso soup, seasonal vegetables, or a small side dish, and it becomes the kind of comforting Japanese set meal that has been enjoyed at home for generations.

Simple to prepare, yet enough to make an everyday table feel just a little more special.
