A surprisingly delicate burrata, made with milk from Tokachi, Hokkaido.



I love burrata.

If I see it on a restaurant menu, I almost always order it.
I love that moment when you cut into it and the creamy centre starts to pour out. And I love its gentle, milky sweetness.

But buying it for home is a little different.

Fresh cheese is all about timing.
You buy it thinking, “I’ll have this today,” and suddenly a few days have passed. I always felt it was difficult to recreate that really fresh, restaurant-quality burrata experience at home.

Then I found this one.

Freshly made burrata using milk from Tokachi, Hokkaido, frozen at its best with a unique freezing technology.

The first time I tried it, I was genuinely surprised.
I decided to bring it in straight away.


That moment is still there.

The outside is soft, gently stretchy mozzarella.

Cut into it, and stracciatella pours from the centre.
The first taste is the gentle sweetness of milk, followed by a rich, lingering creaminess.


It is smooth, delicate, and remarkably fresh for something frozen.

Made one by one by skilled cheesemakers using milk from cows raised with care in Tokachi, Hokkaido.
It is frozen not simply for convenience, but to preserve that freshly made taste at its best.


◎ Thawing Instructions

Keep frozen until ready to enjoy.

Thaw under cold running water for approximately 2 hours.
Once thawed, remove the burrata from its cup and drain off any excess water gently before serving.




◎ Start with the centre.

Once thawed, cut into the burrata and take a first bite of the stracciatella on its own.

Let the soft texture and fresh milkiness come through first.


Then, enjoy it with whatever you like.

A little salt, black pepper and olive oil is all it needs.
Serve it with ripe tomatoes for an easy lunch on a warm day. Add prosciutto and a baguette, and it becomes the kind of plate that makes you want to open a bottle of wine.





It is also beautiful with sweet fruit, such as strawberries or Shine Muscat grapes. A simple, lovely dessert for the days when you want just a little something sweet after dinner.

 




Keep one in the freezer, and open a really good burrata whenever you feel like it.



If you love burrata, I really hope you try this one at least once.
It is that kind of cheese.
