KYOTO-STYLE CURRY KITSUNE UDON

Kyoto-style Curry Udon is a refined noodle dish characterized by its elegant flavor profile based on Japanese dashi broth.

The dish achieves perfect harmony between spiciness and Japanese umami by adding curry powder to a dashi stock made from kombu seaweed, dried sardines, and bonito flakes.

The slightly thickened soup clings well to the firm, chewy udon noodles, creating a satisfying and substantial meal.

The dish is topped with large pieces of sweet and savory simmered aburaage (fried tofu), creating an exquisite combination where the curry's spiciness perfectly complements the tofu's subtle sweetness.
