Created by a restaurant featured in the Michelin Guide Tokyo 2026. In Japan, red sea bream has long been known as a symbol of celebration, often served on auspicious occasions. Here, that meaningful ingredient is carefully prepared using refined French culinary techniques.

Fresh sea bream is gently roasted, both the bones and the flesh and to draw out its full depth of flavor before being transformed into a beautifully balanced soup.
The result is rich yet remarkably clean, allowing the natural sweetness and umami of the fish to shine through with every spoonful.

It is perfectly complete as it is, but can also be enjoyed your way.
