About Hirono Farm's 4 Years uni
"Farm-raised" sea urchin that tastes better than "natural" sea urchin.
Natural Sea Urchin from Hirono Uni Farm that takes four years to grow~
First year, young sea urchins are hatched by hand and grown till about 1 cm in a tank.
Second year, the young sea urchins are then released into the ocean to grow in a natural environment for two years. After two years, grown sea urchins are harvested back to Hirono’s 15km natural farm - an ocean ground dug 55 years ago which now thrives with kelps that are safe from external pollutants.
Using the knowledge of tides, the farm introduces fresh flow of sea water during high tide, and retains the sea water on low tides. The quality of kelps in this natural farm contributes to a healthy food source for the fulfilling growth and flavours of the renown Kita Murasaki uni.
The Cutting-edge Processing Technology
With the desire to provide delicious premium selection from the farm every time, they developed a special processing method.
Special and Extraordinary Facility
One of the reasons that makes the premium innovative food series from Kita-sanriku factory different from others is the absolutely well-prepared environment.
The Kita-sanriku Factory has been operating a new facility since March 2021.
This facility has acquired FSSC22000, a global standard for food safety that also meets the requirements of EU HACCP, which is said to be the most stringent.
The new plant is located next to a fishing port, right in front of the sea, and is close to the production site of food ingredients, which enables them to process food ingredients with high freshness.
With the completion of the facility , their head office was also relocated in the vicinity, making it a manufacturing base that integrates R&D, planning and development, manufacturing, and sales.
This facility will be a manufacturing base that will transmit Kita-Sanriku's products to food lovers around the world.
While being equipped with the latest facilities for processing, they will also process delicate raw sea urchin using seawater sterilized with ultraviolet rays, develop products that meet the needs of new food scenes, and manufacture products using advanced processing technology.
They also have a system in place to ensure stable shipments of sea urchin even when the weather is unstable.
