A Traditional Japanese Sweet, Reimagined as a Modern Mochi Treat.

We’ve been looking for a Japanese mochi sweet for quite some time. We finally found one in Fukui.

“Do you have any sweets made with mochi?”

It’s a request we’ve received many times at JX, and something we’ve been looking for for quite a while.

If we were going to bring one to JX, we wanted more than just something chewy. We wanted something with a story rooted in Japan — and, most importantly, something genuinely delicious.

Then we found Habutae Butter Cheese Sandwiches, made by Fukui-based cheese sweets specialist RUNNY CHEESE.

At the centre is Habutae Mochi, a traditional sweet that has long been loved in Fukui, paired with butter cream and cheese in a very modern way.

And first, just look at the size.
Each one is about 4cm thick.

Habutae Mochi from a Fukui Confectioner with Over 100 Years of History.

Habutae Mochi is one of Fukui’s best-known traditional sweets.

Its name comes from habutae, a fine Japanese silk fabric once closely associated with Fukui, known for its exceptionally smooth and soft texture.

The mochi used here comes from Muranaka Kansendo, a Fukui confectioner established in 1910.

Their traditional Habutae Mochi is layered with butter cream, cheese and anko, then sandwiched between cookies.

A traditional Fukui sweet, turned into something completely modern.
That was one of the reasons we chose it for JX.

4cm Thick. Surprisingly Light.

At this size, you might expect it to be quite heavy.

But the butter cream is whipped with air, giving it a soft, light texture.

First, the crisp cookie.
Then the fluffy butter cream.
And finally, the soft, chewy Habutae Mochi.

Add anko, fruit or nuts, depending on the flavour.

Take a bite through all the layers at once, and you’ll see why this combination works so well.

Three Flavours to Try.

• Habutae Red Bean

Japanese sake, Habutae Mochi, Japanese red bean paste, whole Dainagon red beans, cheese and butter — all layered into one generous sandwich.

The butter cream is whipped with air for a soft, light finish, balancing the red bean paste and chewy mochi.

• Habutae Strawberry

Strawberry red bean paste, original strawberry butter cream and carefully selected semi-dried strawberries — strawberry in three different forms.

Fluffy cream, chewy Habutae Mochi and the soft, moist texture of semi-dried strawberries all come together in one bite.

• Habutae Pistachio

Fragrant pistachio is paired with soft, chewy Habutae Mochi, with the sweetness of the red bean paste and cream carefully adjusted to complement the nuts.

Pieces of pistachio add another texture, creating a lovely contrast with the softness of the mochi.

From the Freezer, One at a Time.

They arrive frozen, so you can enjoy them whenever you like.
Move one to the refrigerator about 3 hours before eating, or leave it at room temperature for around 1 hour if you’re in a hurry.

Coffee or Japanese tea, an afternoon break, one at a time.

Once defrosted, keep refrigerated and enjoy within 5 days.
