What is Shio-Koji?
Shio-koji is a traditional Japanese seasoning made from koji (rice inoculated with koji culture), salt, and water, naturally fermented over time.
It gently breaks down proteins, making fish softer, juicier, and richer in umami.
Its mild sweetness and subtle fermentation aroma lift the natural flavor of the mackerel
without overwhelming it.
HEARTH seasons the saba slowly and carefully with this shio-koji marinade,
allowing the flavor to deepen and settle into a refined, balanced taste.

About the Shio-Koji Grilled Saba
The mackerel is seasoned with shio-koji, allowed to rest,
grilled slowly over the irori hearth, and vacuum-sealed at its peak.

It’s remarkably tender, lightly savory, and naturally flavorful —
a simple dish perfected through time and technique.
How to Prepare
Heat directly from frozen:
Place the sealed bag in simmering water for 4–5 minutes.

Open, plate, and serve with rice or your choice of vegetables for an easy, complete meal.
