Kitsune Sanuki Handmade Whole Frozen Udon
Chewy, Smooth Authentic Sanuki Udon with Sweet Aburaage
Usuke's Kitsune Udon presents a premium frozen udon product, crafted utilizing traditional hand-stretching techniques from Shodoshima, Kagawa Prefecture.
-Noodle Composition-
The udon noodles exhibit a distinctive chewy consistency, attributable to the high moisture content (51% water incorporation during the kneading process).
The noodles possess a smooth exterior and firm texture, contributing to a gratifying culinary experience.
-Broth Flavor-
The broth is rich and flavorful, made with a careful blend of bonito, sardine, and kelp. It uses authentic soy sauce from Shodoshima, resulting in a deep, complex taste that pairs perfectly with the noodles.
-Seasoned Deep-Fried Tofu-
The dish includes small pieces of deep-fried tofu called "kitsune".
These are gently simmered and seasoned with sugar, soy sauce, mirin, and salt. Their subtle sweetness complements the broth, enhancing the overall flavor.

Usuke's Kitsune Udon comes in a vacuum-sealed pack containing the broth, noodles, and deep-fried tofu.
It's incredibly easy to prepare - just empty the contents into a pot and heat.
Heat up in a pot for 8 minutes on high heat until completely melted and the soup is slightly bubbling. Loosen the udon with chopsticks and it is ready to eat.
The noodles and all ingredients come pre-cooked, so there is no need to worry about uncooked parts.
Unlike hand-cut udon or commercial frozen udon products, multiple rounds of hand-stretching over two days is what allows these udon noodles to maintain a delightful, toothsome texture that is softer than al dente but with a pleasant chewiness nevertheless.

How is this "Handmade (手延べ) Udon" Special?
It is made using a hand-pulling method passed down for over 400 years.
The udon noodles are aged and stretched multiple times over two days to enhance their firmness.
In addition to their firmness, the high water content gives the noodles an outstandingly chewy texture and a very smooth surface.
Additionally, they are made with 100% wheat flour, without any hardening agents.

They use an authentic homemade broth made by thoroughly extracting flavors from bonito flakes, sardines, and kombu seaweed, and blending them with soy sauce.

1. Remove the outer and inner bags and place in a pot while still frozen. *No cold or hot water is necessary. 2. Heat over direct heat for approximately 8 minutes while loosening the noodles with chopsticks to prevent them from sticking to the pot. Once boiling, once the ingredients have warmed up they are ready. 3. Transfer from the pot to a serving dish and enjoy. |
