Shinshu Artisan Soba captures this natural blessing in every strand—made with 80% buckwheat flour and only the minimum amount of wheat flour as a binder.

To bring out the full fragrance of the grain, the noodles are crafted using a slow, low-temperature drying method that locks in flavor and aroma.
The result is a noodle that feels supple and smooth, with the depth of freshly milled soba and the refinement of handmade quality—something rarely found in ordinary dried noodles.

How to Cook Soba

Bring a large pot of water to a rolling boil (about 3 L). Gently separate the noodles and add them to the pot. To prevent breaking, cook one bag at a time.

Boil for approximately 2 minutes 30 seconds.
*With its high buckwheat content, these noodles are delicate. Please follow the recommended cooking time carefully.

Once the noodles reach your desired firmness, rinse them quickly under cold water to remove surface starch.
For Zaru Soba (cold serving)
After rinsing, chill the noodles in ice water, drain well, and serve on a bamboo or mesh tray.
Soba Sauce : Mix one packet with 50 ml of water.
For Kake Soba (hot serving)
After rinsing, briefly pass the noodles through hot water, then place them in a bowl and pour over warm broth.
Soba Sauce : Mix one packet with 200 ml of hot water.

Ingredients (serves 1)
・Shinshu Artisan Soba (80% buckwheat) — 80 g
・Green onion — 1/3 stalk
・Lettuce — as desired
・Pork shabu-shabu slices — as desired
・Bell pepper — as desired
For the broth
・Soba Sauce - 80cc
・Unsweetened soy milk – 100 ml
・Sesame seeds – 1 tbsp
・Doubanjiang (chili bean paste) – to taste

Instructions
- Mix the broth ingredients (do not boil).
- Blanch the pork slices briefly, then set aside.
- Boil the soba for about 2 min 30 sec, rinse under cold water, and drain well.
- Serve the soba in a bowl, top with the pork, lettuce, and bell pepper, and pour the broth over.
- Finish with a drizzle of chili oil and sesame seeds.
